1. Preheat oven to 180 degrees...if using a gas oven, put on low or medium-low mark.
2. Prepare your baking tin by greasing with blueband & dust with flour.
3. Separate the eggs, leaving the whites in a bowl and the yolks in a cup.
4. Whisk the egg whites until fluffy and soft peaks form.
5. Add the yolks and continue whisking until well mixed.
6. Add sugar and continue whisking.
7. Add the flour, cocoa, baking powder & baking soda and fold in the mixture.
