  1. You need of Cake Dry Ingredients.
  2. You need 120 grams of sorghum flour.
  3. You need 80 grams of cornstarch.
  4. You need 50 grams of buckwheat flour.
  5. It's of OR 250g PLAIN FLOUR.
  6. It's 1/4 tsp of xanthan gum if using GF flour.
  7. You need 140 grams of caster / superfine sugar.
  8. Prepare 50 grams of cocoa powder.
  9. Prepare 4 tbsp of arrowroot powder / cornstarch.
  10. You need 1 tbsp of baking powder.
  11. Prepare 1 pinch of salt.
  12. You need of Cake Wet Ingredients.
  13. It's 100 grams of sunflower spread / butter, melted.
  14. It's 250 ml of coconut milk or milk of choice.
  15. Prepare 4 tbsp of taken from a mug of milky coffee made with coconut milk.
  16. You need 1 of & 1/2 tsp vanilla extract.
  17. You need 100 grams of chocolate chunks / chips, I use Plamil brand.
  18. It's of Sauce.
  19. Prepare 200 grams of light brown sugar.
  20. You need 25 grams of cocoa powder.
  21. You need 300 ml of boiling water.

  1. Preheat the oven to gas 4 / 180C / 350°F and grease a 2 litre baking dish.
  2. Put the cake dry ingredients into a bowl and mix together.
  3. In another bowl combine the melted butter, milks, coffee and vanilla, then pour into the dry ingredients and stir in until smooth.
  4. Stir in the chocolate pieces then pour into the baking dish.
  5. Mix the brown sugar, cocoa and water together then pour gently over the top of the cake batter.
  6. Bake for 30 minutes until the surface is firm and risen. The sauce will be underneath the sponge.
