- You need 1 1/3 cup of almond flour/ finely ground almonds.
- Prepare 1/2 tsp of baking powder.
- It's Pinch of salt.
- Prepare 1/4 cup of cacao powder.
- You need 1 cup of cacao nibs or roughly chopped 85%+ chocolate.
- You need 1/2 cup of coconut oil.
- It's 2/3 cup of maple syrup.
- Prepare 3/4 cup of apple sauce.
- You need 2 tsp of vanilla extract.
- Prepare 1/2 cup of walnuts, roughly chopped.

If you simply want these to be egg-free, you can use regular dark chocolate, but for Vegan Brownies, you'll need to hunt down dairy. Make these vegan brownies gluten-free by using all-purpose GF flour.
Cacao brownies - vegan step by step
- Preheat oven to 180C. Line a baking tin with baking paper..
- Mix the almond flour, baking powder, salt and cacao together..
- Melt the coconut oil in a pan on a gentle heat. If you’re using 85% chocolate, melt it along with the oil but use a bowl over a saucepan that has water simmering in it - like in the photo. No need to do this with cacao nibs because they don’t melt 😁.
- Mix the oil + cacao nibs + the other wet ingredients..
- Mix the wet ingredients with the dry ingredients. (Without the walnuts.).
- Now it’s time for the walnuts 🎉Add half of the walnuts and gently fold them into the mixture..
- Pour the mix into the tin and sprinkle the remaining walnuts on top. Bake for ~ 25 mins. You have to wait for them to cool before cutting or they fall apart 😕.
- But once they’ve cooled down... enjoy! 😋 Best kept in the fridge..
Dutch or natural cocoa is fine, and raw cacao powder is great too! These vegan brownies have cocoa powder, melted chocolate and a mix of chocolate chunks and chocolate chips all mixed into the batter and then more chocolate chunks and chips sprinkled on top. They are seriously fudgy, with so much chocolate flavor it's like a dream come true. Probably overkill, but I didn't want to risk the brownies sticking. The parchment really makes removal from the pan easier.
